You will need:
- 750 g potatoes, pre-mashed
- 1 onion, or for a more delicate taste, use red onion
- 1 block mature cheddar cheese
- Chilli flakes or chilli powder (optional)
- Salt and pepper to taste
Instructions:
- Preheat oven to 180 degrees
- Chop the onion and grate the block of cheese. If you want it a bit more cheesy, you might want to add a bit more
- Mix together the mashed potato, two thirds of the cheese, the onion and the chilli if you're using it. If you're using a dish that is shallower but wider, use less of the cheese so you have more for the top.
- Put the contents of your bowl into a dish. We usually use a glass Pyrex casserole dish.
- Sprinkle the remainder of the cheese onto the top of the dish
- Cook for 40 mins
My favourite way to serve this is with bacon on the side and some baked beans with Tabasco to spice them up.
More ideas:
- Add bacon or pancetta into the potato mix. I don't usually do this because then the whole pie will be infused by the bacon taste, so I have it on the side.
-Add mushrooms, broccoli, peas or sweetcorn to add some more vegetables. Make sure the sweetcorn is well drained so it doesn't make your pie runny.
-Use a different cheese. Ideas include Red Leicester, Stilton or anything you want really.
-Add a garlic clove for a more garlicky flavour, it's an acquired taste but garlicky potatoes are really nice, so it does work.
-Mustard, grainy or English, is also a really nice addition.

Always make this, it's such a veggie staple and I'll pop one in the oven with chicken or bacon that my hubs will prefer, it's super easy to customise like you said!! Thank you for posting and I'll try your recipe for sure, the one i use has milk so sometimes gets a bit watery!!
